Victoria Shparber of the Black Forest Deli is cooking up unique creations you can use to surprise your mom on Mother's Day.  I mean, who isn't intrigued by White Chocolate Salad?!

Homemade Pierogies with fresh blueberries

Homemade Dough:
1 cup of warm water
1 teaspoon sugar
1 teaspoon salt
5 cups of flour
2 eggs

Roll out the dough until its thin enough to cut out the rounds for the pierogies shape.. We use a glass or a cup to make out the shapes. Fill each pierogie with fresh blueberries (4 in each) or any other desired fruit and close it tightly. Boil some water and throw in desired quantity of pirogies - take out in a few minutes after the water comes to a boil again. Top with fresh fruit compote, sour cream or event melted chocolate

Mothers Day White Chocolate Salad

Ingredients:

Mixed greens or Spinach
Cherry Tomatoes
Avocado
Grilled Chicken
Fresh basil & mint
Carrots
Cucumbers
Toasted almonds and walnuts
Cheese - goat cheese goes well here

Dressing: Raspberry Balsamic (we make our own which is super easy)

Pineapple Chicken Salad Bruschetta

Ingredients:

Poached Chicken Breast
Corn (either fresh or canned)
Fresh Pineapple Chopped
Fresh Dill or Basil

Dressing: Garlic, mayo, olive oil, lemon juice, salt and pepper - use a food processor to gather all of these ingredients together

This chicken salad can be topped on pieces of toast or crackers
