Mike Dontas of the Copperhead Grille stopped by to share a twist on a family favorite--the cheeseburger, just in time for Father's Day!
Spicy Beer Battered Bacon Cheddar Burger
Start with sirloin and chuck blend ground beef (80/20). Form into patties.
Season the raw burger.
Place on grill, cook until medium rare.
Remove burger from grill and dip into flour, then dip into beer batter (recipe below).
Fry burger at 350 degrees until golden brown and crispy, about 3 minutes.
Top with bacon and cheddar cheese. Put on brioche bun.
Top with lettuce, pico de gallo (recipe below), Ranch dressing and Sriracha sauce.
Eat and enjoy!
1/4 cup paprika
1 lb. cornstarch
3 qts all-purpose flour
3 qts lager or light beer
Salt and pepper to taste
1. Add all dry ingredients together and stir.
2. Add wet ingredients to dry ingredients and stir until smooth. Keep on cold ice or store in cooler-- must remain cold in order to work!
Pico de gallo
1 qt. diced tomatoes
1 cup diced onion
2 tsp. iodized salt
1/4 cup fresh lime juice
2 fresh jalapeno, diced
1/2 cup fresh chopped cilantro
Add all ingredients together and toss.
