Restaurant and Bar owner, Greg Melhem, joined 69 News to share some of his tasty recipes. Melhem owns Drinky's in Easton and Roosevelt's 21 in Allentown.

Portabella Mushroom Wrap

Portabella mushrooms soaked in water for 5 minutes
Grilled until tender, then put in balsamic vinegar for 5 minutes to flavor
Heat in pan:
roasted red peppers sliced
sauteed onions sliced
avocado sliced
portabella mushrooms sliced

Put in whole wheat wrap:
herb aioli
lettuce
Tomato
add heated ingredients
Wrap, Cut and Serve


Drunken Clams

A dozen clams sauteed with Chirzo sausage
When sausage crisps add your favorite beer to steam the clams in
When clams are open add leeks
Butter on the side and fried leeks on top to finish


Tomato, Mozzarella Salad

Fill bottom of bowl with spring Mix
4 slices of tomato placed in center of plate seasoned with salt and pepper
4 slices of fresh mozzarella cheese seasoned with salt and pepper
Stack tomato and mozzarella slices alternating each
Drizzle basil oil and balsamic reduction on top


FDR

3 slices of pork roll
3 fried eggs over medium
6 slices of applewood bacon
monterey jack and cheddar mixed cheese
3 (8oz) burgers seasoned with your choice of seasoning
3 hamburger bun halves
Spicy mayo

Cook:
burgers
pork roll
eggs
bacon
add cheese to burger

toast buns
Lay all buns out
Spread spicy mayo on them

Build burger:
Burger, pork roll, egg bacon
Add lettuce, tomato, onion to each layer
Stack and Serve

Fries: 1½ pounds of fresh cut fries with melted cheese sauce and beef chili on top
