Makes 16 canapés
A mixture of sweetened ricotta, chocolate, fruit and nuts is versatile as a splendid topping or dip for cookies, or try it as a quick-to-prepare filling for prepared dessert containers.
½ cup ricotta cheese, preferably whole milk
1 teaspoon coarsely chopped orange zest
1 tablespoon fresh orange juice
1 teaspoon honey, or to taste
1/8 teaspoon pure almond extract
2 tablespoons slivered almonds, coarsely chopped
2 tablespoons semi-sweet chocolate chips
1 tablespoon currants
To complete the recipe
16 gingersnaps or thin chocolate wafers
Cocoa powder for garnish
16 fresh raspberries
To make the ricotta mixture, stir together the ricotta cheese, orange zest, orange juice, honey and almond extract in a medium bowl until smooth. Stir in the remaining ingredients.
To assemble each canapé, spoon a ½ tablespoon dollop of the ricotta mixture in the center of a gingersnap or chocolate wafer. Sprinkle with cocoa powder stirred through a very fine strainer. Top with a raspberry.
