Trying to figure out how to surprise your sweetie this Valentine's Day?  Chef Blake Morgan, owner of Morgan's in South Whitehall Township taught the 69 News at Sunrise team a few sure-to-be-loved recipes for breakfast in bed!

Croissant Stuffed French Toast

Batter:
Whisk together:
3 eggs
1/4 cup milk
2 tsp vanilla
pinch of cinnamon
4 large croissants (split in half)
6 Granny Smith apples, peeled & cored sliced thinly
pinch of cinnamon
1/2 stick butter


Caramel Sauce:
1 cup brown sugar
1/2 cup heavy cream
1/2 stick butter
1 tsp vanilla

1. Prepare egg better by whisking all ingredients together
2. Peel, core & slice apples. Sautee until soft. Add cinnamon & remove apples from pan
3. Place all ingredients in pan for caramel sauce. Bring to a boil then add cooked apples set aside.
4. Prepare French toast by lightly dipping halves in egg batter. Do not soak or French toast will fall apart. Sautee in butter lightly on both sides.
5. Top with apples



Crab, Asparagus & Smoked Mozzarella Frittata

4 eggs whisked
1 tablespoon heavy cream
pinch of salt & pepper
2 oz butter
4 oz crab
1/2 cup diced blanched asparagus
4 slices of Smoked Mozzarella

Prepare asparagus as directed.
Whisk eggs together
sesaon with salt & pepper
melt butter
sautee crab & asparagus until warm
add blended eggs, season with pinch of salt & pepper
When eggs start to set top with cheese place in 400* oven for about 10 minutes until eggs are fully cooked



Fruit Parfaits

1/2 lb strawberries
1/2 pint blueberries
1/8 cup crushed almonds
12 amaretto cookies
1 cup lemon yogurt
fresh mint
splash of champagne


Alternate berries, cookies, yogurt & almonds.
Finish with berries& splash of champagne
